iRedAdmin will log success/failed login in MySQL database, you can view log within iRedAdmin: System -> Admin Log.
For normail access log, it will be logged by Apache, in /var/log/httpd/ssl_*_log (on RHEL/CentOS/Scientific Linux) or /var/log/apache2/error_log (Debian/Ubuntu), etc.

Roundcube will log success/failed logins in Postfix log file, it's /var/log/maillog (on RHEL/CentOS/Scientific Linux/FreeBSD) or /var/log/mail.info (Debian/Ubuntu) or /var/log/mail (openSUSE).
