Topic: postfix&encryption

so In my research on using  mysql as backend for postfix for virtual users. I found an article  . http://flurdy.com/docs/postfix/edition3.html where the virt user data was entered without encryption. so does that mean encryption is optional?
how does postfix and dovecot know when the data is plain text or encrypted?
