Being new to iRedmail excuse me if this a stupid question, but where are spam emails quarantined or are they only tagged as spam?

Spams will be tagged as spam by default, but you can quarantine them into specified directory or SQL database.

To be clear, we have only one edition of iRedMail, it's free and open source, it's what you're running.
iRedAdmin-Pro is an addition web-based admin panel to help you manage mail accounts and other stuffs.

You can enable spam/virus quarantining with above wiki tutorial, it should work as expected. The problem is how you manage quarantined mails. That's why we didn't enable quarantining in iRedMail by default.
