We are currently running
dovecot.x86_64                         1:1.2.17-0_116.el5              installed
dovecot-managesieve.x86_64             0.11.13-0_6.el5                 installed
dovecot-sieve.x86_64                   1:0.1.19-9.1.el5  installed

Wondering what the benefits of Dovecot-2 would bring and if there is any upgrade instructions?

There's no differences with default iRedMail settings.

To find out the differences between 1.2.x and 2.0.x, you have to check its change log:
