I have looked all over and have either missed or just can't find it.

Which version of Postfix gets installed with the current iRedMail package?

If it is not 2.10 (the current stable release from postfix.org) has anyone had any issues migrating/upgrading Postfix after using the iRedMail installer?

Upgrading to 2.10 should be fine, Postfix has great back-compatibility.

Sorry, I haven't acquired a server yet. I'm researching first to eliminate as much trial and error as I can ;-)

So what version of Postfix gets initially installed?

iRedMail installs packages from official package repositories provided by Linux/BSD vendors.
So if you're going to install iRedMail on CentOS, check its official yum repository please (and it should be postfix-2.6.6); if you choose Ubuntu or Debian, check http://packages.ubuntu.com/ or http://packages.debian.org/.
