Several ways.

*) If you want to block a word in mail body, you can do it with Postfix body_checks[1] parameter, or create custom score rule in SpamAssassin (/etc/mail/spamassassin/local.cf).

*) if you want to block a word in mail header, you can do it with Postfix header_checks[1] parameter.
