Starting yesterday, I noticed all mail is being greylisted.

So I suppose the questions are:

Why use greylisting?

Why did this just start happening?

As I don't wish to risk losing messages, I will likely disable greylisting if we cannot resolve.

Paste your sender_restrictions from /etc/postfix/main.cf

It seems that any rule from your sender_restrictions is rejecting that email, not greylist.
That domain isn't valid I think, and for that reason your postfix is rejecting that domain.

xxxx@:~$ host -t mx xband.com.au
Host xband.com.au not found: 3(NXDOMAIN)
xxxx@:~$ host -t txt xband.com.au
Host xband.com.au not found: 3(NXDOMAIN)

As @aarango mentioned, your Postfix setting might be improperly configured, especially "smtpd_recipient_restrictions" parameter. Please show us output of command out "postconf -n".
