I have a customer that must save all email
Can iredmail-pro be configured to save a copy of ALL inbound and ALL outbound email in a mailbox we can search and review?
if so what backend should I install?

You can use BCC feature for both Incoming and Outgoing email traffic.
BCC can be configured globally for all emails in domain or if you prefer individual BCC for some emails - you can do it as also...
