SOGo apt repo key was not imported.

You can try to import it manually, then run iRedMail installer again.

sudo apt-key adv --keyserver keys.gnupg.net --recv-key 0x810273C4

What is going wrong?

Yes I'm using IPv6 as IPv4 is becoming Legacy imo.
The remote mysql server has the user sogo created by the iRedmail installer.

EDIT:
I googled the issue and it said something about not having the right default encoding, which should've been UTF8.
I changed the MySQL default encoding for databases and tables and removed all databases and users regarding iRedmail and reinstalled on a clean mailserver. Same issue.

Is this issue related to SOGo, SOGo Integrator or the SOGo Connector?

Is sogo responsable for the table creation or is iRedmail supposed to do this on installation?

The first problem was with key, follow tour indication that problem was solved, but

I fixed the issue myself using common sense. In web URL's the ipv6 address'  ":" is distinguished  between de port's ":" using block brackets. so you have to change every mysql url to "mysql://sogo:SECRET@[xxxx:xxxx:xxxx:xxxx:xxxx::1]:3306/sogo/sogo_folder_info" in the sogo.conf file.

This issue should be resolved by the iRedmail installer to prevent problems for futher IPv6 Issues using SOGo.
