I need to configure the postfix so that it does not accept emails with non-ASCII characters or unsupported characters - https://tools.ietf.org/html/rfc822#section-6.1

I need to drop messages on the postfix already during a call if there are characters not supported by RFC in the sender or reception (ąęłżźó.., etc). Unfortunately my next hop can't handle such emails and I'd like to whisk them on the connection itself.

I didn't try to implement similar feature in Postfix before, but you can try the "ok_locales" setting in SpamAssassin (/etc/mail/spamassassin/local.cf):
