Sir,
In the iredmail /etc/yum.repos.d/ directory, there are 3 files namely centos-base.repo, centos-media.repo and iredmail.repo to make system up-to-date.

How to make dovecot up-to-date without using iredmail repository ?

Dovecot RPM packages are taken from http://atrpms.net/, you can download it from atrpms and update it manually.
