can a subdomain be something else?

That is to say by default the subdomain we create to install the iRedMail is mail.domain.org etc

Can the subdomain be myrandomsubsomain.domain.org ?

If yes, do we need to change something / config in the settings etc?

the hostname can be anything, as long as it is a fqdn

just check doc:

Don't forget to add required A type DNS record for your (new) server hostname, better add SPF too.
