Topic: Using Apple Mail app or Gmail app on Mobile

Does anyone know if there are security risks to using the native Apple or Google email apps for retrieving and sending email through iRedMail?  Do they just operate as local reader apps or do they still report information about the email to the corporate servers?

It's fine and i use Apple Mail.app everyday.

My concern is security and privacy though. 
1) What does Apple know about your email?  What would Google know? 
2) Can they pull data from the message and send it back to their servers? 
3) Am I right in understanding that the retrieval route of the email is directly from the iRedMail server and never passes through Apple or Google servers?
