Hello! We're using an older version of iredmail. We don't use roundcubemail or SoGo; we use external email clients. Everything works fine now, but I have two questions.
1) Do I need to update or can I continue using the older version?
2) If I install the latest version, will I be able to restore data from a 1.4.2 copy?

You can continue running old version, but better upgrade it to latest version. New version has new features, bug fixes, security fixes, etc.

You can upgrade in place by following iRedMail upgrade tutorials here:

I have another question. Updating from iRedMail-1.5.0 says to update Roundcube to version 1.5.2, but the official website says 1.6.11. Should I first update to 1.5.2 as instructed, or can I just upgrade to 1.6.11?

If your server has newer PHP version which is required by latest Roundcube, then it's ok to upgrade to 1.6.11 directly.
