Hello, I have some doubts, I need configure two redundant email servers. How do I go to a server I assume when the other is unavailable? The second question: is there a centralized way to do login authentication to multiple servers? For example, create a login page that identifies who belongs to that user and direct to the correct server?

You need HAProxy + KeepAlived for fail-over or load-balance mail server cluster. Neither of them is shipped in iRedMail.
