iRedMail    v0.9.5-1
iRedAdmin-Pro    v2.5.0 (MySQL)
nginx

I'm moving this VM where iRedMAil resides to another server using a different set of IPs!
Where do I need to update the new IPs?

Because iRedmail is an integration of services, with each service listening on a specific port. IP's are irrelevant.
