Hello,

Is there a why to use s/mime to sign emails? using roundcube and it look that the current version 1.3.0 does not support this.

yes. looks like this version does not support that. per link: https://roundcube.net/about/

is there a way to install the email cert on server for each mailbox without the email client?

Installing s/mime on a server does brake the entire purpose of a s/mime certificate.
