My problem: 1-2x weekly not working delivering/sending mails.

Not working for me:
restart dovecot
restart sogo
restart nginx
restart postfix
restart iRedAPD

Only solution:
Reboot server

Last problem today (16-7-2019): approx 12:52h

I don't understand what the issue is. did you get any related error message or bounce message for me for troubleshooting?

I can't identify this problem. We only use ActiveSync (Outlook 2016-2019 and Gmail client for Android).
In mail log and syslog not are error. My logs in attachment.

This is not error. It's normal.
we need log or error message related to your issue, otherwise we cannot help troubleshoot.

Ok. Problem is only SOGO. IMAP is OK.

My server have 6Gb RAM.
1. Day: free: 3Gb (Swap: 3Gb free)
3. Day: free: 2Gb (Swap: 3Gb free)
6. Day: free: 0,7Gb (Swap: 3Gb free)
7. Day: free: maybe 0,4Gb (Swap: 3Gb free)
7. Day: auto restart sogo and sogo not working.
7. Day: After auto restart sogo: 1,4 Gb RAM.

Restart sogo not working for me.

30 mailboxes.

Jul 26 08:55:00 sending mail ActiveSync OK.
Jul 26 10:30:00 sending mail ActiveSync not working.
Why Jul 26 03:55:22 log ending sogo?

This log means SOGo was not restarted successfully, you have to run "kill" or "pkill" command to kill SOGo processes, then start/restart it again.
