Hi,
I did installation based on documentation provided on iredmail. Installation is quite up-todate.
When I did "yum update" I saw listing of packages to update. Among packages were also:

Mostly yes. The possible exception is SOGo. I generally run the latest but keep in mind that the free repo of SOGo is their daily build which may or may not break things (I do not allow automatic updates on SOGo).

As far as I am concerned keeping any system exposed to the internet up to date is mandatory.

Keep in mind you really only need to reboot when needs-restarting -r tells you to. Most of the time, when you run needs-restarting (without the -r) you can usually restart individual services. The exception being systemd services.
