How is it possible to set up iRedMail to save emails delivered from a WordPress smtp plugin in Sent or (better) a separate folder?

Just use a simple  filtering rule in your mail client .....

SMTP service doesn't save a copy to mail folder on server, you can try to setup per-user BCC address for this account.
