I would like to just reinstall with the latest download so I would get the latest version.  I think this would be easier and less problematic to do than going through all of the upgrades and the steps to do them. They can be quite complicated.

One thing I would like to do if this is possible is back up all of my mail keeping the folders intact that I have created as seen in Roundcube and when I restore the mail it would also be in all the folders when i started back up.
Is this possible?

With this being said it would be something I would like to do when iredmail upgrades to the bullseye (Debian 11).

- Upgrading in-place is actually quite easy, you can check our upgrade tutorials:
