Does the iRedMail team have a comparisons chart of all the backend iRedMail support with stats on speed/memory/space ... etc.

Unfortunately, no. Sorry.

Personally, i suggest you choose the one you're familar with. For example, if you're good at MySQL, then it's a good idea to choose MySQL.
