==== I have done a fresh install on Ubuntu 12.04 LTS.
I'm running Iredmail on MySQL backend with Iredadmin pro 1.4.0 (MySQL)

I have the following weird issue.
I have to manually add my sender email address.  (the from tab)
With my other servers this was added automagicly.
Has anything changed since previous versions?

You can add one in "Settings -> Identities" manually.

Also, do you have parameter "auto_create_user" set to true in Roundcube config file (/usr/share/apache2/roundcubemail/config/main.inc.php)?

Its freshly installed and out of the box. It used to work in my other mailservers. I will check it out.
