You have very nice backup tool, shipped with iRedMail in iRedMail-0.8.7/tools/backup_pgsql.sh, which backups databases, but how can I backup my mailbox (including letters' content)?

Mail messages are stored in Maildir format, which means each mailbox folder is a directory and each message a file. So you can backup mailboxes like backup normal files/directories. for example, backup to another server with rsync + ssh, etc.
