I'm setting up a backup plan for my mail server but there is 1 more thing I would like to have.  I'm looking for a way to forward every incoming email to a system that can later release them again.  In case the server would crash I could use the last full server backup and then use this extra storage system to deliver the emails to the server again, as if they were coming from the original sender.

I hope I'm making sense, as I know this system exists at an email provider I used in the past.  They had issues one day and they had to revert to a previous copy of the mailboxes and then all emails sent between the time of backup and crash came in during the course of the day, as if they just got sent.

I'd be happy to research this myself but I have no clue where to start looking... so a push in the right direction could be all I need.
